Masala Chick Pea Sauce with Green Rice

I am always looking for new recipes that can satisfy my Indian food cravings! I was inspired recently by this recipe to make a fun and new way to make rice and chick pea masala.  This dish is very easy to make and comes out extremely flavorful! You can also add a nice piece of Naan to this dish as well.

Green Rice

Ingredient:

  • 2 cups of kale
  • 1 jalapeno chopped up
  • 1/2 cup of basil
  • 1.5 cup of jasmine rice ( I used TJ’s frozen jasmine white rice, you can always use a brown rice too)
  • 1/4 cup of water
  • 1/3 cup of minced garlic
  • 1/4 cup of onions
  • 2 tbsp of olive oil

Directions:

  1. Chop up your onions and jalepeno pepper into smaller pieces.
  2. Add the kale, jalepeno, onions, basil, garlic,  and water into a food processor and pulse until you get a smooth green sauce.
  3. In a medium pan heat up the rice. Add 1/4 cup of water to help the rice defrost.
  4. Add the sauce into the rice and keep stirring on high until 3/4 of the liquid has dissolved.
  5. Take off heat and add cilantro to garnish.

Masala Chick Pea

Ingredients:

  • 1 can of chick peas
  • 1 package of grape tomatoes
  • 1/3 of white onion
  • 1 tbsp of olive oil
  • 1 tbsp of cumin
  • 1 tbsp of turmeric
  • 1/3 of earth vegan butter
  • 1 cup of coconut milk
  • Salt and pepper to taste
  • Cilantro to garnish

Directions:

  1. Cut up the tomatoes into smaller pieces and blend in a food processor until the tomatoes becomes a sauce. Set aside.
  2. In a medium sauce pan heat up the olive oil and sauté the onions until they become translucent.
  3. Add the tomatoes, chick peas, cumin, salt and pepper, turmeric and coconut milk.
  4. Simmer the sauce until it’s thicken up  and you are ready to eat!
