Have you ever realized you had way too many bananas in your kitchen ripening faster than you can eat? Today I looked over at my fruit bowl and realized these bananas needed to be put to good use. Then I started think… I feel like I never have enough time to cook myself a decent breakfast and always rushing out the door without a proper meal to start my day. I knew my answer was these bananas would be turned into a muffins! A great on the go breakfast or just a nice treat for my late afternoon cravings. This recipe was very easy to make, and I hope you can give it a try!
Ingredients:
- 1.5 cup of all purpose flour
- 1/2 cup of sugar
- 1 tsp of baking powder
- 1 tsp of baking soda
- 1 tbsp of cinnamon
- 3 ripe bananas
- 3 tbsp of peanut butter
- 5 tbsp of vegan butter ( I used Earth Balance)
- 2/3 cups of chopped up walnuts
- 1 tbsp of maple syrup
- 1 tbsp of vanilla
Directions:
- Preheat the oven to 325 degrees.
- Mix the flour, sugar, baking powder, baking soda and cinnamon together. Once the ingredients are well mix, set aside.
- Using a spoon mashed up 3 bananas. Next add the bananas and butter into the dry mixture until a uniform batter is formed.
- In a small bowl mix the walnut, maple sugar, vanilla till it’s well coated.
- Fill up a muffin pan 2/3 of the way and add walnuts on top.
- Bake for 15 mins until the walnuts are golden.
These look incredible! I have a few overripe bananas on my counter just waiting to be used in a recipe, too!
