Vegan Banana Walnut Muffins

Have you ever realized you had way too many bananas in your kitchen ripening faster than you can eat? Today I looked over at my fruit bowl and realized these bananas needed to be put to good use. Then I started think… I feel like I never have enough time to cook myself a decent breakfast and always rushing out the door without a proper meal to start my day. I knew my answer was these bananas would be turned into a muffins! A great on the go breakfast or just a nice treat for my late afternoon cravings. This recipe was very easy to make, and I hope you can give it a try!

 

Ingredients:

  • 1.5 cup of all purpose flour
  • 1/2 cup of sugar
  • 1 tsp of  baking powder
  • 1 tsp of baking soda
  • 1 tbsp of cinnamon
  • 3 ripe bananas
  • 3 tbsp of peanut butter
  • 5 tbsp of vegan butter ( I used Earth Balance)
  • 2/3 cups of chopped up walnuts
  • 1 tbsp of maple syrup
  • 1 tbsp of vanilla

Directions:

  1. Preheat the oven to 325 degrees.
  2. Mix the flour, sugar, baking powder, baking soda and cinnamon together. Once the ingredients are well mix, set aside.
  3.  Using a spoon mashed up 3 bananas. Next add the bananas and butter into the dry mixture until a uniform batter is formed.
  4. In a small bowl mix the walnut, maple sugar, vanilla till it’s well coated.
  5. Fill up a muffin pan 2/3 of the way and add walnuts on top.
  6. Bake for 15 mins until the walnuts are golden.
